Yellow Corn Meal - GRITS

Yellow Corn Meal - GRITS is a large gritty size corn meal that is derived from northern Indiana farmers producing locally for Prairie Mills. Farmers select special seed for producing corn with dense -hard kernels of grain. These kernels are de-germinated and the bran and flour are separated and the corn meal is then sifted separating the largest granulation for what we call GRITS.  This product is used for many dishes, whether as a stand alone meal time favorite, or as base for center of the plate meat items to rest upon. Yellow Corn Grits have a long history with bakers in all parts of the country, with each region having special recipes, especially for holidays
